Bread

  • Health Bread.

  • This whole wheat bread is enhanced with soy and flax seed. 

    Dips/Appetizers

  • Bruschetta.

  • Tomatoes with basil in an oil and vinegar marinade serve on toasted french bread.
     
     
  • White Bean and Basil Dip.

  • This dip or spread is delicious on french bread or with vegetables. It is a very low fat alternative to cheese or sour cream based dips. You can even use it for sandwiches. 

    Main Courses

  • Red Beans and Rice

  • This New Orleans specialty can be eaten immediately, prepared ahead, or frozen and reheated.  I eat it as a main course and serve it with a vegetable, but it may also be served as a side dish.
     
     
  • Spaghetti Sauce.

  • A tomato based sauce with Italian sausage can be prepared ahead or frozen and reheated. I freeze several 2 cup containers and reheat as needed.
     
     
  • Salmon Casserole.

  • Salmon and vegetables in a white sauce served over noodles makes a wonderful well balanced dinner. I save time by serving one casserole immediately and freeze another for later use.
     
  • Slim Chicken & Stuffing Casserole.

  • Chicken and stuffing make a great freeze ahead casserole. 
     
     
  • Pupusas with Curetado

  • Soups

    Pupusas are an El Salvadoran recipe. I'm looking for a more authentic recipe, but for the time being, try this one.
